- In a large pot over medium heat, cook and stir chicken cubes in olive oil for 5 minutes until golden on the outside.
- Add garlic and cumin and stir to combine.
- Add chicken broth, frozen corn, chopped onion, chili powder, lemon juice, and salsa. Stir to combine.
- Reduce heat to low and simmer for 20 to 30 minutes, stirring occasionally, until chicken is cooked through and flavors have melded.
- Break corn tortilla chips into individual bowls and ladle the hot soup over the top.
- Garnish with dairy-free shredded cheese if desired. Serve immediately.
