Ingredients
  

  • 2 boneless skinless chicken breasts cut into cubes
  • 1/2 teaspoon olive oil
  • 1/2 teaspoon minced garlic
  • 1/4 teaspoon ground cumin
  • 2 cans 14.5 oz each chicken broth (label-checked)
  • 1 cup frozen corn kernels
  • 1 cup chopped onion
  • 1/2 teaspoon chili powder
  • 1 tablespoon fresh lemon juice
  • 1 cup chunky salsa label-checked
  • 8 oz corn tortilla chips dairy-free, label-checked
  • Dairy-free shredded cheese for garnish optional

Method
 

  1. In a large pot over medium heat, cook and stir chicken cubes in olive oil for 5 minutes until golden on the outside.
  2. Add garlic and cumin and stir to combine.
  3. Add chicken broth, frozen corn, chopped onion, chili powder, lemon juice, and salsa. Stir to combine.
  4. Reduce heat to low and simmer for 20 to 30 minutes, stirring occasionally, until chicken is cooked through and flavors have melded.
  5. Break corn tortilla chips into individual bowls and ladle the hot soup over the top.
  6. Garnish with dairy-free shredded cheese if desired. Serve immediately.
