Ingredients
  

  • 1 cup plain or vanilla coconut yogurt
  • 1 cup fresh strawberries, hulled and sliced
  • 1/2 cup granola (dairy-free, label-checked)
  • 1 tbsp pure maple syrup (optional, to taste)
  • 1 tsp chia seeds (optional)
  • Fresh mint for garnish (optional)

Method
 

  1. Spoon half the coconut yogurt into the bottom of a glass, jar, or bowl.
  2. Add a layer of sliced strawberries, followed by a layer of granola.
  3. Repeat with the remaining yogurt, strawberries, and granola.
  4. Drizzle with maple syrup if desired and top with chia seeds and fresh mint.
  5. Serve immediately, or refrigerate overnight for a grab-and-go breakfast — just add the granola right before eating to keep it crunchy.

Notes
