Ingredients
  

  • 1 cup uncooked orzo pasta
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1/4 teaspoon crushed red pepper
  • 2 boneless skinless chicken breast halves cut into bite-size pieces
  • Salt to taste
  • 1 tablespoon chopped fresh parsley
  • 2 cups fresh spinach leaves
  • Dairy-free grated Parmesan for topping

Method
 

  1. Bring a large pot of lightly salted water to a boil. Add orzo and cook for 8 to 10 minutes until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add garlic and crushed red pepper and cook for 1 minute until garlic is golden brown — watch it carefully so it does not burn.
  3. Stir in chicken pieces, season with salt, and cook for 2 to 5 minutes until lightly browned and cooked through.
  4. Reduce heat to medium. Mix in fresh parsley and cooked orzo.
  5. Add spinach to the skillet. Cook for 5 minutes, stirring occasionally, until spinach is wilted.
  6. Serve topped with dairy-free grated Parmesan.
