Method
- Heat olive oil in a large deep skillet or Dutch oven over medium-high heat.
- Add chicken sausage and cook, stirring occasionally, until browned, about 5 to 8 minutes. Remove and set aside.
- In the same pan, add onion and cook for 3 to 4 minutes until softened. Add garlic and cook for 1 minute until fragrant.
- Add crushed tomatoes, tomato sauce, chicken broth, organic cane sugar, oregano, basil, salt, and pepper. Stir to combine.
- Add dry penne pasta and stir to coat. Bring to a boil.
- Return chicken sausage to the pan. Reduce heat to medium-low, cover, and simmer for 18 to 20 minutes, stirring occasionally, until pasta is tender and sauce has thickened.
- Stir in fresh spinach and cook for 1 to 2 minutes until wilted.
- Taste for seasoning and serve immediately.
