Alpha-Gal Friendly Sweet Potato and Spinach Egg Skillet

Ingredients
  

  • 1 medium cut into small matchsticks
  • 1/2 tbsp avocado oil
  • 1 tbsp red onion, chopped
  • 1/4 cup red bell pepper, chopped
  • 1 cup fresh spinach
  • 2 large eggs
  • 2 large egg whites
  • 1/4 tsp smoked paprika
  • Kosher salt and black pepper to taste
  • 1/2 cup fresh strawberries, for serving

Method
 

  1. Heat avocado oil in a skillet over medium heat. Add sweet potato matchsticks and sauté for 8 to 10 minutes, or until fork-tender.
  2. Add red onion and red bell pepper. Cook for 2 minutes, stirring occasionally.
  3. Add spinach and stir until just wilted, about 1 minute.
  4. Add eggs and egg whites. Cover and cook for 2 to 3 minutes, then scramble and cook for an additional 2 minutes, or until eggs are fully set.
  5. Sprinkle with smoked paprika, salt, and pepper before serving. Serve with fresh strawberries on the side.

Notes

When possible, choose organic ingredients, especially spinach and strawberries. Cut sweet potato into small matchstick pieces for faster, more even cooking. Do not rush the sweet potato — give it the full 8 to 10 minutes before adding other vegetables.
