Ingredients
  

For the Chicken
  • 1 1/2 pounds boneless skinless chicken thighs or breasts cubed
  • 1 tablespoon olive oil
  • Salt and pepper to taste
For the Peanut Sauce
  • 1/2 cup natural creamy peanut butter
  • 1 cup full-fat coconut milk
  • 3 tablespoons soy sauce or tamari label-checked
  • 2 tablespoons sweet chili sauce label-checked
  • 1 tablespoon brown sugar
  • 4 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • Juice of 1 lime
  • 1/4 teaspoon crushed red pepper flakes
For Garnish
  • Chopped peanuts
  • Fresh cilantro
  • Lime wedges
  • Cooked rice or noodles for serving

Method
 

  1. Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper.
  2. Add chicken to the skillet and cook, stirring occasionally, until golden on the outside and cooked through, about 8 to 10 minutes.
  3. While chicken cooks, whisk together peanut butter, coconut milk, soy sauce, sweet chili sauce, brown sugar, garlic, ginger, lime juice, and red pepper flakes in a bowl until smooth.
  4. Pour the peanut sauce over the cooked chicken. Stir to coat and bring to a gentle simmer.
  5. Reduce heat to medium-low and simmer for 10 to 15 minutes, stirring occasionally, until the sauce thickens and coats the chicken beautifully.
  6. Serve over rice or noodles. Garnish with chopped peanuts, fresh cilantro, and lime wedges.
