Ingredients
  

  • 4 cups zucchini cut into chunks
  • 1 cup dairy-free biscuit or baking mix label-checked
  • 1/2 cup dairy-free grated Parmesan
  • 4 large eggs lightly beaten
  • 1/2 cup chopped onion
  • 2 cloves garlic minced
  • 1/2 cup avocado oil or vegetable oil
  • 2 tablespoons chopped fresh parsley
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. Preheat oven to 350 degrees F. Lightly grease a 9x13 baking dish.
  2. In a large bowl, combine zucchini chunks, biscuit mix, dairy-free Parmesan, eggs, onion, garlic, oil, parsley, oregano, salt, and pepper. Stir until everything is well combined.
  3. Pour the mixture into the prepared baking dish and spread into an even layer.
  4. Bake uncovered for 25 to 35 minutes, or until the top is golden brown and the center is set.
  5. Let rest for 5 minutes before slicing and serving.
