Alpha-Gal Friendly Zucchini Fritters

These dairy-free zucchini fritters are crispy on the outside, tender on the inside, and completely alpha-gal safe. Ready in just 25 minutes with clean, label-checked ingredients — the perfect way to use up summer zucchini.

Ingredients
  

  • 2 cups grated zucchini
  • 2 large eggs beaten
  • ½ cup all-purpose flour
  • ½ cup dairy-free grated Parmesan
  • ½ cup dairy-free shredded mozzarella
  • ¼ cup finely chopped onion
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder optional
  • 2 tablespoons avocado oil plus more as needed

Method
 

  1. Grate the zucchini and place it in a clean kitchen towel. Twist the towel tightly and squeeze out as much excess moisture as possible.
  2. Add the drained zucchini to a large mixing bowl.
  3. Add the eggs, flour, dairy-free Parmesan, dairy-free mozzarella, onion, salt, black pepper, and garlic powder. Stir until everything is well combined.
  4. Heat the avocado oil in a large skillet over medium heat.
  5. Scoop approximately ¼ cup of the zucchini mixture into the skillet for each patty. Gently flatten each one with the back of a spoon or spatula.
  6. Cook for 2 to 3 minutes per side, or until golden brown and crispy on the outside and cooked through in the center.
  7. Transfer the cooked patties to a paper-towel-lined plate or cooling rack.
  8. Repeat with the remaining zucchini mixture, adding more oil to the skillet as needed.
  9. Serve warm with your favorite alpha-gal-friendly dipping sauce.
