- Preheat oven to 375 degrees F.
- Trim excess fat from chicken thighs and place on a baking sheet.
- Coat chicken thighs with avocado oil, garlic powder, salt, and pepper.
- Bake for 20 to 25 minutes, until internal temperature reaches 165 degrees F.
- While chicken is baking, add chopped broccoli, red onion, sunflower seeds, and cilantro to a large bowl.
- In a small bowl, whisk together mayonnaise, Dijon mustard, apple cider vinegar, lime juice, and lime zest. Pour over broccoli salad and toss until well coated.
- Serve broccoli salad alongside the cooked chicken thighs.
