Ingredients
  

For the Chicken
  • 6 oz boneless skinless chicken thighs
  • 1/2 tbsp avocado oil
  • 1/4 tsp garlic powder
  • Sea salt and black pepper to taste
For the Broccoli Crunch Salad
  • 1 1/2 cups broccoli florets, chopped
  • 2 tbsp red onion, chopped
  • 3/4 tbsp dry roasted sunflower seeds
  • 2 tbsp fresh cilantro, chopped
For the Dressing
  • 3/4 tbsp mayonnaise made with avocado oil
  • 1/4 tbsp Dijon mustard
  • 1/4 tbsp apple cider vinegar
  • Juice and zest of 1/4 lime

Method
 

  1. Preheat oven to 375 degrees F.
  2. Trim excess fat from chicken thighs and place on a baking sheet.
  3. Coat chicken thighs with avocado oil, garlic powder, salt, and pepper.
  4. Bake for 20 to 25 minutes, until internal temperature reaches 165 degrees F.
  5. While chicken is baking, add chopped broccoli, red onion, sunflower seeds, and cilantro to a large bowl.
  6. In a small bowl, whisk together mayonnaise, Dijon mustard, apple cider vinegar, lime juice, and lime zest. Pour over broccoli salad and toss until well coated.
  7. Serve broccoli salad alongside the cooked chicken thighs.
