  • 6 oz boneless skinless chicken thighs
  • 1/2 tablespoon avocado oil
  • 1/4 teaspoon garlic powder
  • Sea salt and black pepper to taste

For the Dressing

  • 3/4 tablespoon mayonnaise made with avocado oil
  • 1/4 tablespoon Dijon mustard
  • 1/4 tablespoon apple cider vinegar
  • Juice and zest of 1/4 lime

How to Make It

  1. Preheat oven to 375 degrees F.
  2. Trim excess fat from chicken thighs and place on a baking sheet.
  3. Coat chicken thighs with avocado oil, garlic powder, salt, and pepper.
  4. Bake for 20 to 25 minutes, until internal temperature reaches 165 degrees F.
  5. While chicken is baking, add chopped broccoli, red onion, sunflower seeds, and cilantro to a large bowl.
  6. In a small bowl, whisk together mayonnaise, Dijon mustard, apple cider vinegar, lime juice, and lime zest. Pour over broccoli salad and toss until well coated.
  7. Serve broccoli salad alongside the cooked chicken thighs.

Tips for Success

Don’t skip the lime zest. The zest is where a lot of the bright citrus flavor lives. It makes the dressing pop in a way that juice alone cannot.

Make it ahead. The broccoli salad actually gets better after sitting in the fridge for 30 minutes. The dressing soaks in and the flavors come together beautifully.
