- Preheat oven to 375 degrees F. Lightly grease a 9-inch pie dish.
- In a large skillet over medium-high heat, cook ground turkey until no longer pink, breaking it up as it cooks. Drain any excess liquid.
- Add taco seasoning and water to the skillet. Stir to combine and simmer for 3 to 5 minutes until the liquid is absorbed.
- Stir in salsa and black beans. Remove from heat.
- Line the bottom and sides of the prepared pie dish with corn tortillas, overlapping slightly to form a crust.
- Spread dairy-free sour cream evenly over the tortilla crust.
- Spoon the turkey filling evenly over the sour cream layer.
- Top with dairy-free shredded cheese.
- Bake uncovered for 20 to 25 minutes until the cheese is melted and the edges are golden.
- Let rest for 5 minutes before slicing. Top with fresh tomatoes, green onions, and cilantro before serving.

Notes
When possible, choose organic ingredients, especially ground turkey. Always check taco seasoning, salsa, and dairy-free cheese labels carefully for mammalian-derived ingredients. To make your own taco seasoning combine 1 tablespoon cumin, 1 teaspoon chili powder, 1 teaspoon garlic powder, 1 teaspoon onion powder, and salt to taste. Press corn tortillas firmly into the pie dish to form a solid crust. Individual alpha-gal reactions vary — always read labels carefully.
