  • 6 small corn tortillas
  • 3/4 cup dairy-free sour cream
  • 1 cup dairy-free shredded cheese (label-checked)

For Topping

  • Diced fresh tomatoes
  • Sliced green onions
  • Fresh cilantro (optional)
  • Extra dairy-free sour cream (optional)

Instructions

  1. Preheat oven to 375 degrees F. Lightly grease a 9-inch pie dish.
  2. In a large skillet over medium-high heat, cook ground turkey until no longer pink, breaking it up as it cooks. Drain any excess liquid.
  3. Add taco seasoning and water to the skillet. Stir to combine and simmer for 3 to 5 minutes until the liquid is absorbed.
  4. Stir in salsa and black beans. Remove from heat.
  5. Line the bottom and sides of the prepared pie dish with corn tortillas, overlapping slightly to form a crust.
  6. Spread dairy-free sour cream evenly over the tortilla crust.
  7. Spoon the turkey filling evenly over the sour cream layer.
  8. Top with dairy-free shredded cheese.
  9. Bake uncovered for 20 to 25 minutes until the cheese is melted and the edges are golden.
  10. Let rest for 5 minutes before slicing. Top with fresh tomatoes, green onions, and cilantro before serving.

Tips for Success

Press the tortillas into the pan well. The corn tortilla crust works best when the tortillas are pressed firmly into the bottom and sides of the pie dish, overlapping slightly to seal any gaps.

Don’t skip the rest time. Five minutes of resting before slicing keeps everything from falling apart and makes for clean, beautiful slices.

Make your own taco seasoning. If you cannot find a clean dairy-free taco seasoning, it is easy to make your own. Combine 1 tablespoon cumin, 1 teaspoon chili powder, 1 teaspoon garlic powder, 1 teaspoon onion powder, and salt to taste.

Double it. This pie freezes beautifully. Make two and freeze one for an easy weeknight dinner later.
