- Preheat oven to 350 degrees F. Lightly grease and flour a 9x13-inch baking pan.
- In a medium bowl, sift together flour, salt, cinnamon, and baking powder. Set aside.
- In a large bowl, beat eggs and organic cane sugar together with an electric mixer on high speed until light in color, about 10 to 15 minutes.
- Beat in olive oil until combined.
- Add flour mixture and mix until just combined.
- Stir in vanilla extract. Fold in diced apples and walnuts.
- Pour batter into the prepared pan and spread into an even layer.
- In a small bowl, mix together 4 teaspoons organic cane sugar and 1 teaspoon cinnamon. Sprinkle evenly over the top of the cake.
- Bake for 40 to 45 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool before slicing and serving.

When possible, choose organic ingredients, especially apples. Use organic cane sugar — regular white sugar is often processed with bone char and may not be suitable for everyone in the alpha-gal community. Beat eggs and organic cane sugar for the full 10 to 15 minutes for the best texture. Do not overmix after adding the flour. Firmer apple varieties like Granny Smith or Honeycrisp hold up best during baking. This cake gets more moist and flavorful overnight. If histamine is a concern, substitute walnuts with toasted pumpkin seeds. Individual alpha-gal reactions vary — always read labels carefully.
