Walnuts — Plain walnuts are alpha-gal safe. Always check for any added coatings or flavorings that could contain mammalian-derived ingredients.
Fresh apples — Fresh apples are alpha-gal safe. Any variety works beautifully here — Granny Smith for a tart flavor, Honeycrisp for sweetness, or a mix of both.

- 4 teaspoons organic cane sugar
- 1 teaspoon cinnamon
Instructions
- Preheat oven to 350 degrees F. Lightly grease and flour a 9×13-inch baking pan.
- In a medium bowl, sift together flour, salt, cinnamon, and baking powder. Set aside.
- In a large bowl, beat eggs and organic cane sugar together with an electric mixer on high speed until light in color, about 10 to 15 minutes.
- Beat in olive oil until combined.
- Add flour mixture and mix until just combined.
- Stir in vanilla extract. Fold in diced apples and walnuts.
- Pour batter into the prepared pan and spread into an even layer.
- In a small bowl, mix together 4 teaspoons organic cane sugar and 1 teaspoon cinnamon. Sprinkle evenly over the top of the cake.
- Bake for 40 to 45 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool before slicing and serving.
