Alpha-Gal Friendly Lemon Garlic Chicken

Ingredients:
- 4 chicken breasts
- 2 tbsp olive oil
- 2 tbsp vegan butter
- 4 cloves garlic, minced
- 2 lemons, juiced and zested
- Salt and pepper to taste
- 1 tsp dried oregano
- 1/4 cup chicken broth
Instructions:
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with salt, pepper, and dried oregano.
- Heat a large oven-safe skillet over medium-high heat. Add the olive oil and butter and let it melt.
- Add the seasoned chicken breasts to the skillet and cook for 3-4 minutes on each side until they are golden brown.
- Add the minced garlic and lemon zest to the skillet and cook for 1-2 minutes until fragrant.
- Pour the chicken broth and lemon juice over the chicken breasts and transfer the skillet to the preheated oven.
