Alpha-Gal Friendly Grilled Lemon Herb Chicken Skewers
Serves 4
Ingredients:
- 4 chicken breasts, cut into cubes
- 2 lemons, juiced and zested
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 1 tbsp dried basil
- 1 tbsp dried oregano
- Salt and pepper to taste
- Wooden skewers, soaked in water for at least 30 minutes
Instructions:
- Preheat your grill to medium-high heat.
- In a small bowl, mix together the lemon juice, lemon zest, olive oil, minced garlic, dried basil, dried oregano, salt, and pepper.
- Thread the chicken cubes onto the wooden skewers, leaving a small gap between each piece.
- Brush the chicken skewers with the lemon herb marinade, making sure to coat them evenly.
