Alpha-Gal Friendly Turkey Chili

Serves 6

Ingredients:

  • 1 lb ground turkey
  • 1 can (14 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Optional toppings: vegan shredded cheese, vegan sour cream, chopped scallions, diced avocado

Instructions:

  1. Heat the olive oil in a large pot over medium-high heat.
  2. Add the chopped onion and minced garlic to the pot and sauté for 3-4 minutes, until the onion is translucent.
  3. Add the ground turkey to the pot and cook for 5-6 minutes, breaking it up into small pieces with a wooden spoon.
  4. Add the diced tomatoes, kidney beans, black beans, chili powder, ground cumin, dried oregano, paprika, salt, and pepper to the pot. Stir well to combine.
  5. Bring the chili to a simmer and let it cook for 20-25 minutes, stirring occasionally, until the flavors are well combined and the chili has thickened. Serve
