Alpha-Gal Friendly Turkey Chili
Serves 6
Ingredients:
- 1 lb ground turkey
- 1 can (14 oz) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 2 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1/2 tsp paprika
- Salt and pepper to taste
- Optional toppings: vegan shredded cheese, vegan sour cream, chopped scallions, diced avocado
Instructions:
- Heat the olive oil in a large pot over medium-high heat.
- Add the chopped onion and minced garlic to the pot and sauté for 3-4 minutes, until the onion is translucent.
- Add the ground turkey to the pot and cook for 5-6 minutes, breaking it up into small pieces with a wooden spoon.
- Add the diced tomatoes, kidney beans, black beans, chili powder, ground cumin, dried oregano, paprika, salt, and pepper to the pot. Stir well to combine.
- Bring the chili to a simmer and let it cook for 20-25 minutes, stirring occasionally, until the flavors are well combined and the chili has thickened. Serve
