Alpha-Gal Friendly Pasta Primavera
Serves 4
Ingredients:
- Pasta: 12 oz of your favorite alpha-gal friendly pasta (chickpea, lentils, brown rice, etc.).
- Vegetables:
- 1 cup asparagus, trimmed and cut into 1-inch pieces
- 1 cup zucchini, diced
- 1 cup yellow squash, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup green peas or I prefer broccoli
- Dressing:
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 tablespoon chopped fresh herbs (basil, parsley, dill, chives, or a mix)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: Grilled chicken or shrimp for added protein
Instructions:
- Prep: Preheat your oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
- Mix: In a bowl, toss your veggies with olive oil, half of the chopped herbs, lemon zest, salt, and pepper. Spread on the baking sheet.
- Salmon: Place salmon fillets on the baking sheet. Drizzle with lemon juice, the rest of the herbs, salt, and pepper.
- Bake: Roast for 15-20 minutes, or until salmon is cooked through to your liking and vegetables are tender.
- Serve: Serve immediately with a squeeze of fresh lemon juice, if desired, and top with your favorite dairy-free parmesan cheese.
