Alpha-Gal Friendly Spicy Roasted Chickpeas

Serves 2-3

Ingredients:

  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon cumin
  • 1/8 teaspoon cayenne pepper (or more, if you like it hot!)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  2. Pat the chickpeas dry with paper towels. This is crucial for crispy results!
  3. In a medium bowl, toss the chickpeas with olive oil, paprika, garlic powder, cumin, cayenne pepper, salt, and black pepper.
  4. Spread the chickpeas in a single layer on the prepared baking sheet.
  5. Roast for 30-40 minutes, or until golden brown and crispy. Shake the pan halfway through for even cooking.
  6. Let cool slightly before enjoying.

Recipe Notes:

  • Adjust the spice: Customize the heat level to your preference. Add extra cayenne, red pepper flakes, or your favorite hot sauce.
  • Flavor variations: Try a sprinkle of curry powder, Italian seasoning, or a pinch of chili powder.
  • Storage: Store roasted chickpeas in an airtight container at room temperature for up to 3 days.
