Alpha-Gal Friendly Vegan Chocolate Chip Cookies

Ingredients:
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup vegan butter, softened (look for brands specifically for baking)
- 1/2 cup granulated sugar (if you can’t do sugar, consider stevia)
- 1/4 cup packed brown sugar
- 1 tablespoon unsweetened applesauce (or mashed banana for a different flavor)
- 1 teaspoon vanilla extract
- 1 cup dairy-free chocolate chips
Instructions:
- Preheat oven to 375 degrees F (190 degrees C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, and salt.
- In a separate large bowl, cream together the vegan butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the applesauce and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Don’t overmix.
- Fold in the chocolate chips.
- Drop by rounded tablespoons onto the prepared baking sheets.
- Bake for 10-12 minutes, or until edges are lightly golden brown.
- Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
