You can also add other alpha-gal friendly ingredients like thinly sliced veggies or try a protein boost with cooked (and cooled) shrimp or tofu for a vegetarian option! I went with shrimp.

Alpha-Gal Friendly Veggie Spring Rolls with Peanut Dipping Sauce
Servings: 8-10 spring rolls
Ingredients:
For the Spring Rolls:
- 8-10 rice paper wrappers
- 1/2 cup julienned carrots
- 1/2 cup thinly sliced cucumber
- 1/2 cup shredded red cabbage
- 1/4 cup thinly sliced red bell pepper
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh mint leaves, chopped
- Optional: 1/2 cup cooked rice noodles or bean sprouts
For the Peanut Dipping Sauce:
- 1/4 cup organic peanut butter (ensure it’s free of animal-derived ingredients)
- 2 tablespoons soy sauce (I prefer liquid aminos)
- 1 tablespoon rice vinegar
- 1 tablespoon maple syrup (or honey, if not on a strict vegan diet)
- 1 teaspoon Sriracha (optional, adjust for heat preference)
- 1-2 tablespoons warm water
Instructions:
Spring Rolls:
- Fill a large bowl or shallow dish with warm water.
- Dip one rice paper wrapper into the water briefly, just until softened. Lay it flat on a clean surface.
- Arrange a small amount of each filling ingredient in a line across the center of the wrapper.
- Fold the bottom of the wrapper over the filling, then fold in the sides. Roll tightly to the top.
- Repeat with remaining wrappers and filling.
Peanut Dipping Sauce:
- In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, maple syrup (or honey), and optional Sriracha.
- Gradually add warm water, whisking until the sauce reaches desired consistency.
To Serve:
- Slice spring rolls in half on a diagonal if desired.
- Arrange on a platter with the peanut sauce for dipping.
