- 1 tsp vanilla extract
- 1 egg (or 1 flax egg: 1 tbsp flaxseed meal + 3 tbsp water)
- 1 cup fresh strawberries, diced
For the cream cheese filling:
- 8 oz dairy-free cream cheese
- 1/4 cup organic cane sugar
- 1 tsp vanilla extract
Instructions:
- Preheat your oven to 375°F (190°C).
- Line a muffin tin with paper liners or grease with a dairy-free cooking spray.
- In a medium bowl, combine the dairy-free cream cheese, 1/4 cup granulated sugar, and 1 tsp vanilla extract. Mix until smooth and set aside.
- In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, and salt.
- In a separate bowl, combine the melted coconut oil, almond milk, vanilla extract, and egg (or flax egg). Mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
- Gently fold in the diced strawberries.
- Fill each muffin cup with about 1 tablespoon of batter.
