- 1/2 cup full-fat coconut milk
- 2 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1 tsp vanilla extract
Instructions:
- In a small saucepan, combine the blueberries and water. Cook over medium heat until the blueberries start to burst, about 5-7 minutes.
- Remove from heat and let the mixture cool slightly. Blend the blueberries until smooth using a blender or immersion blender.
