This Vegan Mushroom & Sage Stuffing is a savory dish with rich flavors from mushrooms and herbs. It’s a perfect side for anyone following an alpha-gal diet, as it uses vegetable broth instead of traditional meat-based stocks.
Vegan Mushroom & Sage Stuffing
Servings: 8
Ingredients:
- 1 loaf of alpha-gal-friendly bread (gluten-free if needed), cubed
- 1 lb mushrooms, sliced
- 1 onion, diced
- 3 celery stalks, diced
- 1/4 cup olive oil or vegan butter
- 1 tsp dried sage
- 1 tsp dried thyme
- 2 cups vegetable broth
- Salt and pepper to taste
Instructions:
- Preheat oven to 350°F (175°C).
- Sauté onions, mushrooms, and celery in olive oil until soft. Add sage and thyme.
- In a large bowl, toss bread cubes with sautéed vegetables. Slowly pour in vegetable broth and mix until bread is moist but not soggy.
- Transfer mixture to a baking dish and bake for 30-40 minutes until golden on top.
