Gluten-Free Cornbread
Ingredients:
- 1 cup gluten-free cornmeal
- 1 cup gluten-free all-purpose flour
- 2 tbsp coconut sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup almond milk
- 1/4 cup olive oil
- 1 tbsp apple cider vinegar
Instructions:
- Preheat oven to 400°F (200°C).
- In a large bowl, mix cornmeal, flour, sugar, baking powder, and salt.
- In a separate bowl, whisk almond milk, olive oil, and apple cider vinegar. Combine with dry ingredients and mix until just combined.
- Pour into a greased baking dish and bake for 20-25 minutes.
