Whether making this yummy side dish for a fall meal or taking it to Thanksgiving dinner, it’s sure to bring a smile to everyone’s face. These Kahlua-glazed carrots will compliment whatever dish you’re serving.

The recipe originally calls for crumbled bacon atop, but you you can do without or try turkey bacon (without the sugar in it). I’m really enjoying Godshall’s Uncured Turkey Bacon.

If you cannot have dairy, you can use vegan butter.

Alpha-Gal Friendly Kahlua Carrots

Yield: 5 Servings

INGREDIENTS

  • 3 cups carrots, sliced
  • 1 tablespoon butter
  • 2 tablespoons brown sugar
  • 1 tablespoon honey
  • 3  tablespoons Kahlua or other coffee-flavored liqueur, divided
  • 1 tablespoon cornstarch
  • 1/2 teaspoon salt
  • 3 to 6 bacon slices (fried crisp and crumbled)

INSTRUCTIONS

  1. Cook carrots in a steamer until they’re tender-crisp which should take 4-5 minutes.
  2. Remove from heat.
  3. Melt Butter in a skillet over medium heat.
  4. Stir in brown sugar, honey & 2 tablespoons of the Kahlua and cook until it bubbles.
  5. Mix the remaining Kahlua with the cornstarch and stir until it’s a smooth mixture. Add to the brown sugar mixture.
  6. Add salt and cook until the mixture thickens.
  7. Add the carrots and toss gently to coat. Continue cooking until the carrots are thoroughly heated.
  8. Put carrots in a serving dish and top with the crumbled bacon.
