Alpha-Gal-Friendly Wild Rice Pilaf

Servings: 6-8

Ingredients:

  • 1 cup wild rice
  • 2 cups water or vegetable broth
  • 1/2 cup diced carrots
  • 1/2 cup diced celery
  • 1/2 cup finely chopped onions
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste

Instructions:

  1. In a medium saucepan, bring water or broth to a boil.
  2. Add wild rice and simmer covered for about 45 minutes, or until the rice is tender and the kernels pop open.
  3. Meanwhile, heat olive oil in a skillet over medium heat.
  4. Sauté onions, carrots, and celery until soft and translucent, about 8 minutes.
  5. Once the rice is cooked, fluff it with a fork and mix in the sautéed vegetables.
  6. Stir in thyme, parsley, salt, and pepper.
  7. Serve warm as a perfect side to your holiday dishes.

Consider adding a splash of white wine to the sautéing vegetables for an added depth of flavor. Also, using vegetable broth instead of water can enhance the overall richness of the pilaf.
