This alpha-gal-friendly chili recipe is quick and easy to make. It uses mostly canned ingredients, so you can make a quick trip to the store, get everything you need, and have it ready by dinnertime.

Alpha-Gal Friendly Vegetarian Chili

Serves 6

Ingredients:

  • 2  tablespoons olive oil
  • 1  medium yellow onion, diced
  • 4  cloves garlic, chopped
  • 1  1/2 teaspoons ground cumin
  • 1  teaspoon chili powder
  • 1  medium zucchini, sliced and then quartered
  • 6-ounce can tomato paste
  • 1 can (15.5 ounces) black beans, rinsed and drained
  • 1 can (15.5 ounces) pinto beans, rinsed and drained
  • 1 can (14.5 ounces) diced tomatoes with green chiles
  • 1 can (14.5 ounces) diced tomatoes
  • Shredded cheddar cheese (daiya)

Instructions:

  1. In a large pot, heat olive oil over medium-high heat.
  2. Add onion and garlic and cook until onion is soft.
  3. Add cumin and chili powder and salt and pepper to taste.
  4. Add zucchini and tomato paste and cook, stirring often.
  5. Add beans, both cans of tomatoes, 2 cups of water and bring mixture to a boil.
  6. Reduce heat and simmer on low for about 20 minutes or until zucchini is tender.
  7. Top with shredded cheddar cheese, if desired.
