Alpha-Gal-Friendly Apple Crisp
Servings: 6-8
Ingredients:
- 4 large apples, peeled, cored, and sliced
- 1 teaspoon ground cinnamon
- 1/2 cup almond flour
- 1/2 cup old-fashioned oats
- 1/3 cup coconut oil, melted
- 1/3 cup brown sugar or coconut sugar
- Pinch of salt
Instructions:
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, toss the apple slices with cinnamon and transfer them to a baking dish.
- In the same bowl, combine almond flour, oats, coconut oil, sugar, and salt until the mixture resembles coarse crumbs.
- Sprinkle the crumb topping evenly over the apples.
- Bake for 30-35 minutes, until the topping is golden brown and the apples are bubbly.
- Serve warm, perhaps with a scoop of dairy-free vanilla ice cream.
Cooking Tip: Mix in some chopped pecans or walnuts into the crumb topping for added depth and a nutty texture. This not only adds crunch but also complements the softness of the baked apples.
