Alpha-Gal-Friendly Coconut Milk Rice Pudding
Servings: 4-6
Ingredients:
- 1 cup uncooked white rice
- 2 cups water
- 3 cups coconut milk
- 1/3 cup sugar (organic, coconut, or beet sugar) – Serving may change depending on level of sweetness.
- 1 teaspoon vanilla extract
- Cinnamon for sprinkling (optional)
Instructions:
- In a medium saucepan, bring the water to a boil. Add the rice and reduce heat to low. Cover and simmer until the water is absorbed, about 15-20 minutes.
- Stir in the coconut milk and sugar, and continue to cook over low heat, stirring frequently, until the mixture thickens and the rice is creamy, about 15-20 minutes.
- Remove from heat and stir in the vanilla extract.
- Serve warm or chilled, sprinkled with cinnamon if desired.
Cooking Tip: Mix in some raisins or chopped nuts for a richer flavor and added texture towards the end of cooking. This enhances the taste and adds delightful surprises with each bite.
