Alpha-Gal-Friendly Green Bean Almondine

Servings: 8-10

Ingredients:

  • 1 lb fresh green beans, trimmed
  • 1/2 cup sliced almonds
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

  1. Blanch the green beans in boiling water for 3-4 minutes until they are bright green and tender-crisp. Drain and immediately shock in ice water to stop the cooking process and preserve their vibrant color.
  2. In a skillet, heat olive oil over medium heat. Add garlic and almonds, sautéing until the almonds are lightly toasted and fragrant.
  3. Add the blanched green beans back to the skillet, toss with the almonds and garlic, and season with salt and pepper.
  4. Serve hot, garnished with additional toasted almonds if desired.

Cooking Tip: For an extra touch of luxury, add a splash of lemon juice or zest to the green beans just before serving to enhance their flavor with a refreshing citrus note.
