Alpha-Gal-Friendly Green Bean Almondine
Servings: 8-10
Ingredients:
- 1 lb fresh green beans, trimmed
- 1/2 cup sliced almonds
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
- Blanch the green beans in boiling water for 3-4 minutes until they are bright green and tender-crisp. Drain and immediately shock in ice water to stop the cooking process and preserve their vibrant color.
- In a skillet, heat olive oil over medium heat. Add garlic and almonds, sautéing until the almonds are lightly toasted and fragrant.
- Add the blanched green beans back to the skillet, toss with the almonds and garlic, and season with salt and pepper.
- Serve hot, garnished with additional toasted almonds if desired.
Cooking Tip: For an extra touch of luxury, add a splash of lemon juice or zest to the green beans just before serving to enhance their flavor with a refreshing citrus note.
