Alpha-Gal Friendly Grilled Lemon Herb Chicken Skewers

Serves 4

Ingredients:

  • 4 chicken breasts, cut into cubes
  • 2 lemons, juiced and zested
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1 tbsp dried basil
  • 1 tbsp dried oregano
  • Salt and pepper to taste
  • Wooden skewers, soaked in water for at least 30 minutes

Instructions:

  1. Preheat your grill to medium-high heat.
  2. In a small bowl, mix together the lemon juice, lemon zest, olive oil, minced garlic, dried basil, dried oregano, salt, and pepper.
  3. Thread the chicken cubes onto the wooden skewers, leaving a small gap between each piece.
  4. Brush the chicken skewers with the lemon herb marinade, making sure to coat them evenly.
  5. Place the chicken skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and no longer pink in the middle.
