Alpha-Gal-Friendly Herb-Crusted Salmon with Lemon Butter Sauce
Servings: 6-8
Ingredients:
- 2 lbs salmon fillet
- 1/4 cup olive oil
- 1/4 cup fresh parsley, finely chopped
- 1/4 cup fresh dill, finely chopped
- 2 cloves garlic, minced
- Zest of 1 lemon
- Salt and pepper to taste
For the Lemon Butter Sauce:
- Preheat your oven to 400°F (200°C).
- Place the salmon skin-side down on a baking sheet lined with parchment paper.
- In a bowl, mix olive oil, parsley, dill, garlic, lemon zest, salt, and pepper. Spread this herb mixture evenly over the top of the salmon.
- Roast in the oven for 12-15 minutes, or until the salmon is just cooked through.
- For the sauce, melt dairy-free butter in a small saucepan over medium heat.
- Add lemon juice and mustard, whisking until combined.
- Season with salt and pepper.
- Serve the salmon with the lemon butter sauce drizzled over the top.
Instructions:
- Preheat your oven to 325°F (165°C).
- Rinse the turkey and pat dry. Season the cavity with salt and pepper.
- Mix the olive oil and herbs in a bowl. Rub the herb mixture all over the turkey, both under and over the skin.
- Roast in the oven for 3 to 3.5 hours, or until the internal temperature reaches 165°F (74°C).
- Let the turkey rest for 20 minutes before carving.
For an extra crispy herb crust, broil the salmon for the last 2-3 minutes of cooking, keeping a close eye to prevent burning.
