Alpha-Gal Friendly Pasta Primavera

Serves 4

Ingredients:

  • Pasta: 12 oz of your favorite alpha-gal friendly pasta (chickpea, lentils, brown rice, etc.).
  • Vegetables:
    • 1 cup asparagus, trimmed and cut into 1-inch pieces
    • 1 cup zucchini, diced
    • 1 cup yellow squash, diced
    • 1 cup cherry tomatoes, halved
    • 1/2 cup green peas or I prefer broccoli
  • Dressing:
    • 1/4 cup olive oil
    • 2 tablespoons lemon juice
    • 1 tablespoon chopped fresh herbs (basil, parsley, dill, chives, or a mix)
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
  • Optional: Grilled chicken or shrimp for added protein

Instructions:

  1. Prep: Preheat your oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  2. Mix: In a bowl, toss your veggies with olive oil, half of the chopped herbs, lemon zest, salt, and pepper. Spread on the baking sheet.
  3. Salmon: Place salmon fillets on the baking sheet. Drizzle with lemon juice, the rest of the herbs, salt, and pepper.
  4. Bake: Roast for 15-20 minutes, or until salmon is cooked through to your liking and vegetables are tender.
  5. Serve: Serve immediately with a squeeze of fresh lemon juice, if desired, and top with your favorite dairy-free parmesan cheese.
