Alpha-Gal-Friendly Stuffed Acorn Squash

Servings: 6-8

Ingredients:

  • 2 acorn squashes, halved and seeds removed
  • 1 cup cooked quinoa
  • 1/2 cup dried cranberries
  • 1/2 cup pecans, chopped
  • 1/4 cup onion, finely chopped
  • 1 clove garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried sage
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Brush the inside of each acorn squash half with olive oil and season with salt and pepper. Place on a baking sheet, cut side down, and roast for about 25-30 minutes until tender.
  3. While the squash is roasting, heat a skillet over medium heat. Add the remaining olive oil and sauté onion and garlic until translucent.
  4. In a bowl, combine the sautéed onion and garlic, cooked quinoa, cranberries, pecans, sage, salt, and pepper.
  5. Once the squash is tender, remove from the oven, flip over, and stuff with the quinoa mixture.
  6. Return to the oven and bake for an additional 10 minutes.

Cooking Tip: To enhance the flavor, drizzle a little maple syrup over the squash before stuffing it. This adds a subtle sweetness that pairs wonderfully with the savory filling.
