Alpha-Gal-Friendly Stuffed Acorn Squash
Servings: 6-8
Ingredients:
- 2 acorn squashes, halved and seeds removed
- 1 cup cooked quinoa
- 1/2 cup dried cranberries
- 1/2 cup pecans, chopped
- 1/4 cup onion, finely chopped
- 1 clove garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried sage
- Salt and pepper to taste
Instructions:
- Preheat the oven to 375°F (190°C).
- Brush the inside of each acorn squash half with olive oil and season with salt and pepper. Place on a baking sheet, cut side down, and roast for about 25-30 minutes until tender.
- While the squash is roasting, heat a skillet over medium heat. Add the remaining olive oil and sauté onion and garlic until translucent.
- In a bowl, combine the sautéed onion and garlic, cooked quinoa, cranberries, pecans, sage, salt, and pepper.
- Once the squash is tender, remove from the oven, flip over, and stuff with the quinoa mixture.
- Return to the oven and bake for an additional 10 minutes.
Cooking Tip: To enhance the flavor, drizzle a little maple syrup over the squash before stuffing it. This adds a subtle sweetness that pairs wonderfully with the savory filling.
