Alpha-Gal Friendly Turkey Meatballs with Tomato Sauce

Serves 4

Ingredients:

For the meatballs:

  • 1 lb ground turkey
  • 1/2 cup almond flour
  • 1 egg
  • 2 cloves garlic, minced
  • 2 tbsp chopped fresh parsley
  • Salt and pepper to taste

For the tomato sauce:

  • 1 can (14 oz) diced tomatoes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the ground turkey, almond flour, egg, minced garlic, chopped parsley, salt, and pepper. Mix well until all the ingredients are evenly combined.
  3. Form the turkey mixture into small meatballs, about 1-2 inches in diameter.
  4. Heat a large skillet over medium-high heat. Add the olive oil and let it heat up.
  5. Add the diced onion and minced garlic to the skillet and sauté for 3-4 minutes until the onion is translucent.
  6. Add the can of diced tomatoes, dried oregano, salt, and pepper to the skillet. Bring the sauce to a simmer and let it cook for 5-7 minutes until the flavors are well combined.
  7. Transfer the tomato sauce to a large baking dish. Arrange the turkey meatballs in the tomato sauce, making sure to leave a little bit of space between each meatball.
  8. Bake the meatballs in the preheated oven for 25-30 minutes or until they are cooked through and no longer pink in the middle.
  9. Serve the meatballs hot, garnished with fresh parsley and grated Parmesan cheese if desired.
