Dairy-Free Sweet Potato Casserole

Ingredients:
- 4 large sweet potatoes
- 1/4 cup dairy-free butter
- 1/4 cup almond milk
- 1/4 cup maple syrup
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp vanilla extract
- 1 cup chopped pecans
- 1/4 cup almond flour
- 2 tbsp coconut sugar
Instructions:
- Preheat oven to 350°F (175°C).
- Peel and boil the sweet potatoes until soft, then mash them with dairy-free butter, almond milk, maple syrup, cinnamon, nutmeg, and vanilla extract.
- In a small bowl, mix pecans, almond flour, and coconut sugar.
- Transfer the mashed sweet potatoes to a baking dish and sprinkle the pecan crumble on top. Bake for 20-25 minutes.
