Tofu Scramble with Peppers and Onions
Serves 2-3
Ingredients:
- 1 (14-ounce) block extra-firm tofu, drained and pressed
- 1 tablespoon olive oil
- 1/2 cup chopped onion
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped red bell pepper
- 1/4 teaspoon turmeric
- 1/4 teaspoon smoked paprika
- 1/2 teaspoon nutritional yeast
- Salt and black pepper, to taste
Instructions:
- Crumble the tofu into a large skillet with your hands or a potato masher.
- Heat the olive oil over medium heat. Add the onion and bell peppers and cook, stirring occasionally, until softened, about 5 minutes.
- Add the crumbled tofu, turmeric, paprika, and nutritional yeast to the skillet. Stir well to combine.
- Cook for an additional 5-7 minutes, or until the tofu is heated through and any excess moisture has evaporated. Season with salt and pepper to taste.
