Ingredients:
- 1 1/2 cups all-purpose flour
- 2 tablespoons granulated sugar or another sweetener that works for you
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/4 cups plant-based milk (such as soy milk, almond milk, or oat milk)
- 2 very ripe bananas, mashed
- 2 tablespoons vegetable oil or melted vegan butter
- 1 teaspoon vanilla extract
Instructions:
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the plant-based milk, mashed bananas, vegetable oil (or melted butter), and vanilla extract.
- Add the wet ingredients to the dry ingredients and stir until just combined. Don’t overmix, a few lumps are okay.
- Heat a large skillet or griddle over medium heat. Grease lightly with oil or vegan cooking spray.
