Ingredients

- 6 tablespoons cold vegan butter (I love Earth Balance or Miyoko’s oat-based butter) – Walmart
- ¾ cup unsweetened almond or oat milk – Walmart | Amazon
- 1 teaspoon apple cider vinegar (creates that buttermilk tang) – Walmart | Amazon

Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, whisk together flour, baking powder, salt, and sugar.
- Cut in the cold vegan butter using a pastry cutter or fork until the mixture looks crumbly — pea-sized bits are perfect.
- In a small bowl, combine your plant milk and apple cider vinegar. Let it sit for 2–3 minutes to curdle slightly (your alpha-gal-friendly buttermilk!).
- Pour the wet mixture into the dry ingredients and stir gently until a soft dough forms.
- Turn the dough out onto a floured surface. Gently knead 3–4 times (don’t overwork it).
- Roll or pat the dough to about ¾-inch thick and cut with a biscuit cutter or glass.
- Place on a parchment-lined baking sheet.
- Bake 12–15 minutes or until golden brown.
- Optional: Brush tops with melted vegan butter when they come out of the oven for that extra southern touch.
Tips & Variations
- For flaky layers: Fold the dough in half and roll it out again before cutting.
- For gluten-free: Use a 1:1 gluten-free flour blend with xanthan gum.
- For sweeter biscuits: Add 2 tablespoons of sugar and top with a drizzle of honey substitute or fruit jam.
- For savory: Add chopped chives, garlic powder, or shredded vegan cheese.
