Alpha-Gal Friendly Turkey Meatballs with Tomato Sauce

Ingredients:
For the meatballs:
- 1 lb ground turkey
- 1/2 cup almond flour
- 1 egg
- 2 cloves garlic, minced
- 2 tbsp chopped fresh parsley
- Salt and pepper to taste
For the tomato sauce:
- 1 can (14 oz) diced tomatoes
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the ground turkey, almond flour, egg, minced garlic, chopped parsley, salt, and pepper. Mix well until all the ingredients are evenly combined.
- Form the turkey mixture into small meatballs, about 1-2 inches in diameter.
- Heat a large skillet over medium-high heat. Add the olive oil and let it heat up.
- Add the diced onion and minced garlic to the skillet and sauté for 3-4 minutes until the onion is translucent.
- Add the can of diced tomatoes, dried oregano, salt, and pepper to the skillet. Bring the sauce to a simmer and let it cook for 5-7 minutes until the flavors are well combined.
- Transfer the tomato sauce to a large baking dish. Arrange the turkey meatballs in the tomato sauce, making sure to leave a little bit of space between each meatball.
- Bake the meatballs in the preheated oven for 25-30 minutes or until they are cooked through and no longer pink in the middle.
- Serve the meatballs hot, garnished with fresh parsley and grated Parmesan cheese if desired.
