Ingredients
- 1 cup dry green or brown lentils – Walmart | Amazon
- 2 cups vegetable broth (verify mammal-free ingredients) – Walmart | Amazon
- 1 tablespoon olive oil – Walmart | Amazon
- 1 onion, diced – Walmart
- 2 carrots, diced – Walmart
- 2 cloves garlic, minced – Walmart
- 1 tablespoon tomato paste – Walmart | Amazon
- 1 tablespoon soy sauce (or tamari for gluten-free) – Walmart | Amazon
- ½ cup frozen peas – Walmart
- 4 medium potatoes, peeled and chopped – Walmart
- ¼ cup unsweetened almond milk (or other dairy-free milk) *– Walmart | Amazon
- Salt and pepper, to taste

Instructions
- Cook lentils in vegetable broth, simmering for 20–25 minutes until tender. Drain any excess liquid and set aside.
- Boil potatoes in a separate pot for 10–12 minutes, or until fork-tender. Drain and mash with almond milk, salt, and pepper. Set aside.
- Heat olive oil in a large skillet over medium heat.
- Add onion, carrots, and garlic and sauté for 5–7 minutes until softened.
- Stir in tomato paste, soy sauce (or tamari), and frozen peas. Cook for another 2–3 minutes.
- Preheat oven to 375°F (190°C).
- Spread the lentil and vegetable mixture evenly into a baking dish.
- Top with mashed potatoes and smooth the surface.
- Bake for 20–25 minutes, until the top is lightly browned.
- Let cool for a few minutes before serving.

- Freezer-friendly: Freeze unbaked or baked for later meals.
- Extra creamy: Add 1 tablespoon vegan butter to the mashed potatoes.
- More flavor: Add rosemary or thyme to the lentil mixture.
