Completely dairy-free, completely mammal-free, and completely worth every minute in the kitchen.

What Makes These Cinnamon Buns Alpha-Gal Safe?

Label-reading never takes a day off — not even for breakfast.

Oat flour — Most oat flour is naturally dairy-free, but cross-contamination can be an issue in facilities that process dairy products. Look for certified gluten-free or allergen-friendly oat flour if cross-contamination is a concern for you.

Coconut milk — Used both in the dough and the icing. Look for full-fat canned coconut milk with a short, clean ingredient list. The coconut milk needs to be very cold to whip up properly for the icing — do not skip the freezer step.

Monk fruit sweetener — A natural, plant-based sweetener that is alpha-gal safe. Always check the label as some blends contain erythritol or other additives.

Coconut sugar — A natural sweetener derived from coconut palm sap. Alpha-gal safe and a great alternative to refined sugar.

Walnuts — Plain walnuts are alpha-gal safe. Always check for any added coatings or flavorings that could contain mammalian-derived ingredients.

  • Fresh sweet potato is generally well tolerated — use it the same day for best results

  • Walnuts are higher in histamine — substitute with toasted pumpkin seeds or omit altogether
  • Vanilla extract can be a trigger for some — substitute with a small amount of vanilla powder

Ingredients

For the Buns

  • 2 sweet potatoes, baked and mashed
  • 1.5 cups oat flour
  • 1/4 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1/4 cup organic coconut sugar
  • 8 teaspoons cinnamon
  • 1 pump avocado oil cooking spray

For the Coconut Icing

  • 1.5 cups full-fat coconut milk, chilled
  • 1/2 cup monk fruit sweetener
  • 1 teaspoon vanilla extract

For Topping

  • 6 tablespoons chopped walnuts

How to Make Them

  1. Preheat oven to 400 degrees F. Place coconut milk can, a mixing bowl, and whisk attachment in the freezer.
  2. Poke holes in sweet potatoes and bake for about 1 hour until soft. Remove skin and mash in a large bowl.
  3. Slowly mix in oat flour, baking powder, and baking soda until combined. Cover bowl with a dish towel and let rise for 30 to 60 minutes.
  4. Once dough has risen, flour a large surface and roll out to about 1/8 inch thickness.
  5. Sprinkle dough evenly with cinnamon and coconut sugar. Roll up lengthwise and cut into 6 pieces.
  6. Grease a baking dish or cast-iron skillet with avocado oil spray. Place buns in the dish and bake for 15 to 20 minutes.
  7. While buns are baking, remove chilled materials from the freezer. Using a mixer on high, beat coconut milk, monk fruit sweetener, and vanilla until stiff peaks form.
  8. Top cooled cinnamon buns with coconut icing and chopped walnuts before serving.

Tips for Success

Chill everything for the icing. The coconut milk, bowl, and whisk all need to be very cold for the icing to whip up properly. Do not skip this step — it makes all the difference.

Let the dough rise. The 30 to 60 minute rise time is important for texture. Be patient — it is worth it.

Roll thin. Aim for about 1/8 inch thickness when rolling out the dough. Too thick and the buns will be dense; too thin and they may fall apart when rolling.

Let them cool before icing. Adding icing to warm buns will cause it to melt right off. Give them a few minutes to cool first.
