- 1/4 cup red bell pepper, chopped

- 2 large eggs
- 2 large egg whites
- 1/4 teaspoon smoked paprika
- Kosher salt and black pepper to taste
- 1/2 cup fresh strawberries, for serving
How to Make It
- Heat avocado oil in a skillet over medium heat. Add sweet potato matchsticks and sauté for 8 to 10 minutes, or until fork-tender.
- Add red onion and red bell pepper. Cook for 2 minutes, stirring occasionally.
- Add spinach and stir until just wilted, about 1 minute.
- Add eggs and egg whites. Cover and cook for 2 to 3 minutes, then scramble and cook for an additional 2 minutes, or until eggs are fully set.
- Sprinkle with smoked paprika, salt, and pepper before serving. Serve with fresh strawberries on the side.
Tips for Success
