Ingredients
- 6 boneless skinless chicken breast halves
- 1/4 cup plain breadcrumbs (dairy-free, label-checked)
- 1/2 cup dairy-free grated Parmesan
- 3 tablespoons plant-based butter, melted
- 1 teaspoon dried parsley
- 1 teaspoon dried oregano
- 1/4 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 400 degrees F. Lightly grease a 9×13 baking dish.
- In a shallow bowl, combine breadcrumbs, dairy-free Parmesan, parsley, oregano, paprika, salt, and black pepper. Mix well.
- Dip each chicken breast into the melted plant-based butter, coating all sides.
- Press each buttered chicken breast into the breadcrumb mixture, coating evenly on all sides.
- Place coated chicken breasts in the prepared baking dish.
- Drizzle any remaining melted butter over the top of the chicken.
- Bake uncovered for 20 minutes, or until internal temperature reaches 165 degrees F and the coating is golden and crispy.
- Let rest for 5 minutes before serving.
Tips for Success
Press the coating in firmly. Don’t just dip — press the breadcrumb mixture into the chicken so it adheres well and gives you that beautiful crispy crust.
Use a meat thermometer. Chicken breasts need to reach an internal temperature of 165 degrees F. A thermometer takes the guesswork out completely.
Don’t overcrowd the pan. Leave a little space between each chicken breast so the heat can circulate and the coating can crisp up properly.
Let it rest. Five minutes of resting time before slicing keeps the juices inside where they belong.
