Chicken | Dinner | Soups | Prep Time: 10 minutes | Cook Time: 30 minutes | Servings: 4
There is something about a warm bowl of chicken tortilla soup that just fixes things. This alpha-gal friendly version is everything you love about the classic — tender chicken, sweet corn, chunky salsa, and warm spices simmered together in a rich broth — with crispy corn tortilla chips on top and not a single mammal ingredient in sight. It comes together in just 40 minutes and is the kind of meal that feels like a hug in a bowl. Perfect for lunch or dinner any time of year.
A Quick Note Before You Shop
When possible, we recommend purchasing organic ingredients. It’s not always feasible or affordable, and that’s okay — do what you can. But for those who are more sensitive or working to reduce overall toxic load, organic is worth the effort, especially for chicken and corn.
What Makes This Soup Alpha-Gal Safe?
Label-reading never takes a day off — not even for soup night.
Chicken broth — Most plain chicken broth is alpha-gal safe, but always check the label. Some brands add yeast extract, natural flavors, or other additives worth checking. Look for a broth with a short, clean ingredient list.
Chunky salsa — Most plain salsas are alpha-gal safe, but always read the label. Some specialty varieties contain unexpected additives or preservatives. Look for a simple, clean ingredient list.
Corn tortilla chips — Most plain corn tortilla chips are alpha-gal safe. Flavored varieties can contain dairy or other mammalian-derived ingredients. Stick with simple, unflavored chips and read the label.
Chili powder and cumin — Most plain spices are alpha-gal safe, but always check for any added anti-caking agents or fillers that could be problematic.
Dairy-free cheese garnish — The original recipe calls for Monterey Jack cheese. Swap in your favorite dairy-free shredded cheese for garnish, or skip it altogether — the soup is delicious either way.
As always: your alpha-gal is not my alpha-gal. Individual reactions vary, and what works beautifully for one person may not for another. Read every label, trust your gut (literally), and adjust accordingly.
For the Low-Histamine Community
If histamine is also on your radar, a few small swaps can help:
- Use fresh chicken and cook immediately after purchasing
- Salsa can be a trigger for some — substitute with fresh chopped tomatoes and a small amount of tomato paste
- Chili powder can be a trigger for some — reduce the amount or omit altogether
- Corn is generally well tolerated but individual reactions vary
- Fresh lemon juice is generally better tolerated than bottled
As always, individual tolerance varies. Start with what you know works for your body.

- 1/4 teaspoon ground cumin
- 2 cans (14.5 oz each) chicken broth (label-checked)
- 1 cup frozen corn kernels
- 1 cup chopped onion
- 1/2 teaspoon chili powder
- 1 tablespoon fresh lemon juice
- 1 cup chunky salsa (label-checked)
- 8 oz corn tortilla chips (dairy-free, label-checked)
- Dairy-free shredded cheese for garnish (optional)
How to Make It
- In a large pot over medium heat, cook and stir chicken cubes in olive oil for 5 minutes until golden on the outside.
- Add garlic and cumin and stir to combine.
- Add chicken broth, frozen corn, chopped onion, chili powder, lemon juice, and salsa. Stir to combine.
- Reduce heat to low and simmer for 20 to 30 minutes, stirring occasionally, until chicken is cooked through and flavors have melded.
- Break corn tortilla chips into individual bowls and ladle the hot soup over the top.
- Garnish with dairy-free shredded cheese if desired. Serve immediately.
Tips for Success
Break the chips into the bowl, not the pot. Adding chips directly to the pot will make them soggy fast. Break them into individual bowls right before serving so they stay crispy.
Let it simmer. The 20 to 30 minute simmer is where the flavors come together. Don’t rush it — patience makes the soup.
Make it heartier. Add a can of drained and rinsed black beans or a handful of baby spinach in the last 5 minutes of cooking for extra substance.
Use rotisserie chicken. Short on time? Shredded rotisserie chicken works beautifully here. Just make sure it is plain and label-checked for mammalian-derived ingredients. Add it in step 3 and reduce the simmer time.
Final Thoughts
This chicken tortilla soup is proof that comfort food does not have to disappear with an alpha-gal diagnosis. A little label-reading at the grocery store and you’ve got a warm, satisfying bowl that is completely safe for your table — and guaranteed to become a regular in your rotation.
If you make this, I’d love to hear how it turned out. Come share it in the Facebook community — we are all figuring this out together.
