Chicken | Dinner | Prep Time: 20 minutes | Cook Time: 30 minutes | Servings: 4

If you have been looking for a dinner that feels truly impressive without requiring hours in the kitchen, this is it. These baked Italian chicken rollatini are tender chicken cutlets stuffed with a savory spinach and dairy-free cheese filling, rolled up, breaded, and baked until golden. The kind of dinner that looks like it came from a restaurant and tastes even better. Completely dairy-free, completely mammal-free, and on the table in under an hour.

A Quick Note Before You Shop

When possible, we recommend purchasing organic ingredients. It’s not always feasible or affordable, and that’s okay — do what you can. But for those who are more sensitive or working to reduce overall toxic load, organic is worth the effort, especially for chicken and fresh spinach.

What Makes This Recipe Alpha-Gal Safe?

Label-reading never takes a day off — not even for an impressive Italian dinner.

Chicken cutlets — Chicken is alpha-gal safe, but always check the packaging. Look for plain boneless skinless chicken breast cutlets with one ingredient: chicken. Some pre-marinated varieties contain mammalian-derived ingredients.

Dairy-free ricotta — The key swap here. Several great dairy-free ricotta options are available now, typically made from almond or cashew base. Always read the label carefully to confirm no dairy or mammalian-derived ingredients are present.

Dairy-free mozzarella — Look for a plant-based mozzarella with a short, clean ingredient list. Always check the label.

Dairy-free Parmesan — Look for a clean, plant-based Parmesan alternative. Always check the label.

Plain breadcrumbs — Most plain breadcrumbs are alpha-gal safe, but always check for dairy or other mammalian-derived ingredients on the label.

Fresh spinach — Fresh spinach is alpha-gal safe. Always give it a good rinse and squeeze out excess moisture before using in the filling.

As always: your alpha-gal is not my alpha-gal. Individual reactions vary, and what works beautifully for one person may not for another. Read every label, trust your gut (literally), and adjust accordingly.

For the Low-Histamine Community

If histamine is also on your radar, a few small swaps can help:

  • Use fresh chicken and cook immediately after purchasing
  • Fresh spinach is generally better tolerated than frozen
  • Dairy-free ricotta and mozzarella can vary in ingredients — check labels carefully for fermented or aged ingredients
  • Lemon juice is generally well tolerated — always use fresh over bottled

As always, individual tolerance varies. Start with what you know works for your body.

  • 1 egg yolk
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper to taste

For the Chicken

  • 4 boneless skinless chicken breast cutlets, pounded thin
  • 1 cup plain breadcrumbs (dairy-free, label-checked)
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

For Serving

  • Your favorite alpha-gal safe marinara sauce (label-checked)
  • Fresh basil for garnish

Instructions

  1. Preheat oven to 375 degrees F. Lightly grease a baking dish with olive oil.
  2. In a bowl, stir together dairy-free ricotta, dairy-free mozzarella, dairy-free Parmesan, chopped spinach, garlic, egg yolk, Italian seasoning, salt, and pepper until well combined.
  3. In a shallow bowl, whisk together olive oil and lemon juice. Place breadcrumbs in a separate shallow bowl.
  4. Pound chicken cutlets thin between two sheets of plastic wrap or parchment paper.
  5. Lay each cutlet flat. Spoon a generous amount of the filling onto the center of each cutlet.
  6. Roll each cutlet tightly around the filling and place seam side down in the prepared baking dish.
  7. Dip the top of each rollatini in the olive oil and lemon mixture, then press into the breadcrumbs to coat.
  8. Bake uncovered for 25 to 30 minutes, until the breadcrumbs are golden and the internal temperature reaches 165 degrees F.
  9. Let rest for 5 minutes before serving. Serve with your favorite alpha-gal safe marinara sauce and fresh basil.

Tips for Success

Pound the chicken thin. The thinner the cutlet the easier it is to roll and the more evenly it cooks. Aim for about 1/4 inch thickness.

Squeeze the spinach dry. Excess moisture in the spinach will make the filling watery and the rollatini difficult to roll. Squeeze it thoroughly in a clean kitchen towel before adding to the filling.

Place seam side down. This keeps the rollatini from unrolling during baking without the need for toothpicks.

Check your marinara. Many store-bought marinara sauces are alpha-gal safe, but always read the label. Some contain hidden dairy or other mammalian-derived ingredients.

Final Thoughts

These baked Italian chicken rollatini are proof that alpha-gal eating can be elegant, exciting, and deeply satisfying. A little label-reading at the grocery store and you’ve got a restaurant-worthy dinner on the table in under an hour.
