Desserts | Prep Time: 10 minutes | Chill Time: 15 minutes | Servings: 24 cookies
These might just be the easiest dessert you will ever make — and they taste shockingly close to the real thing. Two simple ingredients, a microwave, and about 25 minutes stand between you and a batch of crispy, minty, chocolate-coated cookies that are completely alpha-gal safe. Make a big batch and keep them in the freezer for whenever a chocolate mint craving hits. Fair warning — they disappear fast.
A Quick Note Before You Shop
When possible, we recommend purchasing organic ingredients. It’s not always feasible or affordable, and that’s okay — do what you can. But for those who are more sensitive or working to reduce overall toxic load, organic is worth the effort where possible.
What Makes These Cookies Alpha-Gal Safe?
Label-reading never takes a day off — not even for a two-ingredient recipe.
Simple Mills Almond Flour Crackers — These are our cracker of choice here. They are round, thin, slightly salty, and have a buttery flavor that works beautifully as the base for these cookies. They are dairy-free and made with a clean, simple ingredient list. Always check your specific box before purchasing as formulas can change.
Dairy-free chocolate melting wafers — The original recipe uses Andes mints which contain dairy. We swap in dairy-free dark chocolate melting wafers with peppermint extract stirred in. Look for chocolate melts with a short, clean ingredient list and no dairy derivatives. Several brands make excellent dairy-free options.
Peppermint extract — Pure peppermint extract is alpha-gal safe. Always check the label for any added ingredients.
As always: your alpha-gal is not my alpha-gal. Individual reactions vary, and what works beautifully for one person may not for another. Read every label, trust your gut (literally), and adjust accordingly.
For the Low-Histamine Community
If histamine is also on your radar, a few small swaps can help:
- Dark chocolate can be a trigger for some — substitute with dairy-free white chocolate melts for a different but equally delicious version
- Peppermint extract is generally well tolerated but individual reactions vary — reduce the amount if needed
- Always choose the freshest box of Simple Mills crackers possible for best results
As always, individual tolerance varies. Start with what you know works for your body.

Tips for Success
Keep them cold. These cookies are best served cold or straight from the freezer — just like the real thing. The cold temperature gives them that signature crispy snap.
Don’t over-add the peppermint. Peppermint extract is potent. Start with 1/4 teaspoon and taste the chocolate before dipping. Add more only if you want a stronger mint flavor.
Use a fork for dipping. A fork gives you the most control and helps remove excess chocolate easily. A toothpick or dipping tool also works well.
Make a big batch. These freeze beautifully and keep for up to three months. Double or triple the recipe and stock the freezer for whenever a craving hits.
Final Thoughts
These thin mint cookies are proof that the simplest recipes are sometimes the most satisfying. A little label-reading at the grocery store and you’ve got a chocolate mint treat that is completely alpha-gal safe — and honestly better than anything from a box.
If you make this, I’d love to hear how it turned out. Come share it in the Facebook community — we are all figuring this out together.
