Happy International Coffee Day, friend! If you’re reading this early or late, it’s on Thursday, October 1. 🙂

When I was diagnosed with alpha-gal, it felt like everything in my kitchen was suddenly up for questioning. The meat went. The dairy went. Foods I’d loved for years turned into things I had to read three times before trusting.

Coffee stayed. And honestly, I held onto it a little tighter because of that.

But something shifts when you spend your days reading labels. You stop taking anything for granted. I started wondering about what was in my coffee too, and not just what I was putting in it.

That’s how I found Danger Coffee.

What caught my attention first was that it’s lab-tested and mold-free. After everything alpha-gal had taught me about paying attention, that mattered. It felt like one less thing to wonder about.

Then I learned the beans are remineralized with fulvic and humic minerals, which the company says add more than 50 trace minerals to every cup. I liked the idea that something I was already doing every morning could give a little something back.

It’s also single origin and sourced directly from small estate farms, and it comes in just about every form you could want: whole bean, ground, instant, and pods, in medium, dark, and decaf.

I tried it. And it’s been starting my mornings ever since.

How I Drink It

Danger Coffee starts my mornings, and I drink it black.

I like to grind my own beans for the freshest cup. But I also keep the ground decaf on hand for those afternoons when I just want a cup of coffee without the extra kick.

Making It Alpha-Gal Friendly

Drinking it black keeps things simple for me, but I know not everyone is a black coffee person, and you don’t have to be.

One heads up: Danger Coffee was designed with the classic butter coffee recipe in mind, and butter is dairy. If you avoid dairy, here are a few swaps to try:

Oat milk is creamy and mild, and it froths well for lattes.

Coconut milk or coconut cream adds richness, especially in iced coffee.

Almond milk is light and softens the bitterness.

Coconut oil gives you that rich, blended texture butter coffee is known for.

Plant-based creamers work too, but read those labels carefully.

What to watch for on creamer labels

Look out for milk, cream, butter, whey, casein, and sodium caseinate. That last one catches a lot of people, because it shows up in some creamers labeled non-dairy. Some people with alpha-gal also react to carrageenan, and vague terms like natural flavors may be worth a quick call to the manufacturer.

Every alpha-gal journey looks a little different, so trust what your body tells you and talk with your doctor if you’re unsure about an ingredient.
