For the maple vinaigrette:

Instructions
- Preheat oven to 400°F. Line a baking sheet with parchment paper.
- Toss squash cubes with olive oil, salt, and pepper. Spread evenly on the baking sheet and roast for 25–30 minutes, stirring halfway through, until golden and tender.
- In a large bowl, layer greens, roasted squash, cranberries, pumpkin seeds, and dairy-free cheese if using.
